Mexi Corn Casserole Recipe

Ingredients

  • 1 stick butter
  • 1 1/2 tbsp. sugar
  • 2 cans cream of corn
  • 1 pkg. Mexican cornbread mix
  • 1 lg. egg
  • 1 sm. onion
  • minced
  • 1/2 c. lowfat milk

Instructions

  1. Heat butter in skillet; add in onion and saute/fry.
  2. Beat egg in bowl; add in sugar, lowfat milk, onions, corn, and cornbread mix.
  3. Beat together.
  4. Place in greased casserole and bake about 1 hour at 350 degrees, uncovered.
  5. NOTE: This can be frzn after cooking.
