Mexi Corn Casserole Recipe
Ingredients
- 1 stick butter
- 1 1/2 tbsp. sugar
- 2 cans cream of corn
- 1 pkg. Mexican cornbread mix
- 1 lg. egg
- 1 sm. onion
- minced
- 1/2 c. lowfat milk
Instructions
- Heat butter in skillet; add in onion and saute/fry.
- Beat egg in bowl; add in sugar, lowfat milk, onions, corn, and cornbread mix.
- Beat together.
- Place in greased casserole and bake about 1 hour at 350 degrees, uncovered.
- NOTE: This can be frzn after cooking.
