Mashed Potatoes With Pesto

Ingredients

  • 2 lbs boiling potatoes
  • peeled and cubed
  • 14 cup basil pesto
  • 12 cup heavy cream
  • 4 tablespoons butter
  • salt and pepper

Instructions

  1. Place the potatoes in a large saucepan, add enough cold water to cover the potatoes and cover the pot.
  2. Heat on high, bring the water to a boil.
  3. Reduce heat to medium and simmer until potatoes can be easily pierced with a knife, about 20 minutes.
  4. While the potatoes are cooking, combine the cream, butter and basil in a small saucepan and heat over medium heat until the butter is melted and the cream is hot.
  5. Drain the potatoes and allow them to sit in the colander for a couple of minutes.
  6. Place the potatoes in a mixing bowl and mash.
  7. Stir in the cream mixture by thirds.
  8. Season with salt and pepper to taste.
