Ingredients
- 8 med. sweet potatoes
- 3 tbsp. butter
- 1/2 c. warm lowfat milk
- 1 teaspoon salt
- 1 teaspoon nutmeg
- 1/8 teaspoon paprika
- 1 c. minced walnuts
- 2 c. miniature marshmallows
Instructions
- Cook sweet potatoes till tender, remove skins and mash.
- Add in butter, lowfat milk, nutmeg and paprika.
- Beat till free of lumps and light and fluffy.
- Mix in nuts.
- Spoon into greased casserole, cover completely with marshmallows and beat till marshmallows are browned.
- Bake at 350 degrees approximately 30 min.
