Ingredients
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon sugar
- 14 teaspoon salt
- 14 teaspoon pepper
- 2 (3 ounce) cans tuna in olive oil
- 1 small bay leaf
- 1 whole clove
- 4 cups torn leaf lettuce
- 3 cups shredded radicchio
- 2 tomatoes
- cut in wedges
- 2 tablespoons toasted pine nuts
- 1 tablespoon chopped fresh parsley
Instructions
- Combine olive oil, lemon juice, sugar, salt and pepper.
- Stir in tuna with its oil, bay leaf and clove.
- Cover and refrigerate for at least 1 hour.
- Remove and discard bay leaf and clove.
- In large serving bowl, toss lettuce and radicchio.
- Place tuna mixture in center of bowl, on top of the lettuces.
- Surround with tomatoes and sprinkle with salt and pepper to taste.
- Scatter pine nuts and parsley over top.
