Ingredients
- 2 quarts water
- 12 lb turnip
- peeled and cut into 1-inch cubes
- 5 -6 medium yukon gold potatoes
- cut into 1-inch cubes
- 14 medium cauliflower head
- cut into 1-inch cubes
- 2 teaspoons olive oil
- 1 tablespoon maple syrup
- 12 teaspoon salt
- 12 teaspoon black pepper
- 12 cup unsweetened soymilk
Instructions
- Fill a large saucepan with 2 qt of water.
- Bring to a boil.
- Add turnips, reduce heat to medium and cook for 15 minutes.
- Add potatoes, return to simmer and cook another 5 minutes.
- Add cauliflower and cook for another 15 minutes or until all vegetables are tender.
- Drain vegetables and mash.
- While mashing add olive oil, maple syrup, salt, and pepper.
- Heat soymilk in microwave until hot and pour into vegetable mixture and continue to mash.
