Ingredients
- 1 1/2 c. flour
- 1/4 c. sugar
- 1 tbsp. baking pwdr
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 1/2 c. fresh cut up ripe mango
- 1 egg
- 1/2 c. lowfat milk
- 1/4 c. butter
- melted
Instructions
- In a large mixing bowl, combine first 5 ingredients.
- Gently mix in mango.
- In a small bowl, whisk together the egg, lowfat milk, and melted butter.
- Add in to the flour mix and stir.
- Spread into as greased 8 x 8 inch baking pan.
- Combine topping ingredients and sprinkle over batter: 3/4 c. brown sugar 1 tbsp.
- flour 1/4 c. minced walnuts (we get these and pecans in care pkgs.!!)
- Bake at 425 degrees for 20-25 min, till top is light golden.
- We get bushels of fresh mango off of the tree in our yard.
- This would also work great with fresh blueberries or possibly peaches you get.
