Ingredients
- 1 tablespoon olive oil
- 2 cloves garlic crushed
- 4 each chicken breasts boneless
- skinned
- 1 1/4 pound mushrooms julienned
- 1 cup chicken broth
- 2 1/2 teaspoons mint leaves chopped
- 1/2 cup parmesan
- parmigiano-reggiano cheese
- grated grated
- 1/2 cup heavy whipping cream
Instructions
- In a skillet over medium high heat, add oil and saute garlic two minutes; add chicken and saute five minutes on each side.
- Add julienned mushrooms, broth and fresh chopped mint.
- Cook, partially covered about 7 minutes, or until mushrooms are tender.
- Stir in cheese; cover and cook 3 minutes.
- Add cream and cook 2 minutes.
