Ingredients
- 1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
- 1 cup cream of chicken soup
- 1 cup goat cheese (crumbled)
- 1 cup monterey jack pepper cheese (grated)
- 1 cup sour cream
- 12 cup fresh green onion (sliced)
- 12 cup fresh cilantro leaves
- 12 cup cooked bacon (crumbled)
- 12 teaspoon salt
- 12 teaspoon black pepper
- 2 tablespoons butter (melted)
- 1 cup corn flakes (crushed)
Instructions
- In a large bowl combine cream of chicken soup, goat cheese, pepper jack cheese, sour cream, scallions, cilantro, bacon, salt and pepper.
- Mix well.
- Add potatoes with onions to ingredients and mix well coating potatoes completely.
- Pour potatoe mixture into a casserole dish coated with non-stick spray.
- Combine melted butter and crushed corn flakes to make a crumbly topping.
- Top potatoes with topping and bake.
- 1 hour at 350.
