Major's JiffyTM raspberry corn muffins
Ingredients
- 1 box Jiffy corn muffin mix
- 2 eggs
- 1/2 cup buttermilk
- 1 cup raspberries
Instructions
- pre heat oven to 400
- grease muffin tin
- mix eggs & buttermilk
- add muffin mix to wet ingredients
- mix well, 3-4 min on high with mixer
- gently stir in raspberries
- fill muffin tins 1/2 full
- bake 15-20 minutes
- for a sweet crusty top sprinkle with sugar before baking
- blueberries also work well for this
