12 ounce. sm. curd cottage cheese or possibly 8 ounce. cream cheese
1 pound Monterey Jack cheese
grated
1 (4 ounce.) jar or possibly can sliced mushrooms
4 tbsp. butter
1/8 teaspoon celery salt
1/4 teaspoon med. grind black pepper
1 sm. onion
minced and sauteed
1 teaspoon salt
1 c. unsifted flour
1/2 teaspoon baking pwdr
2 (4 ounce.) cans minced green chilies
1 (4 ounce.) can sliced black olives
Instructions
Preheat oven to 350 degrees.
In a large bowl combine beaten Large eggs, cottage cheese, grated cheese, mushrooms, spices, onion, flour, baking pwdr, green chilies, black olives, and optional ingredients.
Blend carefully and pour into a greased 9x13 inch baking dish or possibly 8-c. quiche pan sprayed with non-stick vegetable cooking spray.
Bake 35-45 min.
Let stand 5 min before cutting and serving.
Recipe may be halved and poured into a 10x6 inch pan or possibly 9-inch quiche pan.
NOTE: Reduce flour to 1/2 c. when vegetable, sausage, or possibly shrimp are added.
