Ingredients
- 1 stick butter (1/4 lb.)
- 1/2 c. powdered sugar
- 2 c. sifted all-purpose flour
- Dash of salt
Instructions
- Preheat oven to 350 degrees.
- Spray 9x13 pan or possibly 9-inch springform pan with non-stick spray coating.
- Combine crust ingredients; beat till smooth.
- Press with fingers onto bottom of prepared pan.
- Bake 15 min till lightly brown.
- Cold slightly while making topping.
- Beat Large eggs and sugar with electric mixer till very creamy.
- Add in flour, lemon juice and rind.
- Beat till well blended and pour over hot crust.
- Bake for 25 min.
- Let cold.
- Sprinkle an proportionately heavy layer of powdered sugar over top of cold pastry.
- Cut and serve at room temperature.
- Store air-tight at room temperature for 1 week.
- Freeze up to 6 months.
- Cut in squares.
- Serves 24.
