Luna's Stacked Red Enchiladas

Ingredients

  • 10 corn tortillas
  • 5 cups red enchilada sauce
  • 5 ounces sharp cheddar cheese (grated)
  • 1 Spanish onion (chopped or grated)
  • 2 eggs

Instructions

  1. Fry tortillas one at a time in hot oil.
  2. Fry them until they are firm but not crisp.
  3. Put tortilla on plate, cover with 1/4 to 1/2 cup of sauce.
  4. Sprinkle with onion and cheese.
  5. Add meat if desired.
  6. Repeat steps until desired amount of layers are complete.
  7. Put completed enchildada in oven for 5 to 10 minutes.
  8. Top with basted egg.
