Ingredients

  • 4 teaspoons olive oil
  • 4 medium baking potatoes
  • scrubbed
  • 12 teaspoon salt
  • 18-14 teaspoon fresh ground black pepper
  • 14 cup grated parmesan cheese

Instructions

  1. Line a 15 x 10 x 1 inch baking pan with heavy-duty foil; brush with 2 teaspoons of the oil.
  2. Set aside.
  3. Cut the potatoes lengthwise into 1/2-inch wedges.
  4. Transfer to a large bowl.
  5. Add remaining 2 teaspoons oil; toss to coat.
  6. Sprinkle potato wedges with salt and pepper, tossing to coat.
  7. Arrange potato wedges in a single layer in prepared baking pan.
  8. Bake in a 450 degree F oven for 12 minutes.
  9. Carefully turn potato wedges; sprinkle with cheese.
  10. Bake for 10 to 12 minutes more or until potatoes are tender and golden.
  11. Serve immediately.
