Low Fat Apple and Cinnamon Muffins

Ingredients

  • 1 12 cups self-raising flour
  • 1 cup wholemeal self-rising flour
  • 2 teaspoons cinnamon
  • 34 cup brown sugar
  • 34 cup sultana
  • 2 apples
  • peeled and grated
  • 2 tablespoons margarine
  • melted
  • 1 14 cups skim milk
  • 1 egg
  • lightly beaten
  • 1 teaspoon vanilla essence

Instructions

  1. Preheat oven to 180 Degrees Celsius.
  2. Lightly grease 12-hole muffin pan.
  3. Sift flour and cinnamon into a bowl.
  4. Stir in brown sugar, sultanas and apple.
  5. Make a well in centre.
  6. Whisk together margarine, milk, egg and vanilla.
  7. Pour into flour and mix with a fork.
  8. Stir until just combined don't overbeat.
  9. Spoon mixture into prepared pan and bake for 20 minutes.
  10. Leave in pan for a few minutes to cool and then remove onto wire rack.
