Ingredients

  • 1 3/4 cup rolled oats
  • 3 egg whites
  • 3/4 cup unsweetened cocoa
  • 1/2 cup unsweetened applesauce
  • 1 tsp caramel extract
  • 1/2 cup plain low fat yogurt
  • 1/2 tsp vinegar
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup Hot water
  • 1/2 cup sweetener that measures like sugar
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350F
  2. Mix all Ingredients except the chocolate chips
  3. Once combined, stir in half of chocolate chips
  4. Spoon into muffin pan coated with nonstick cooking spray
  5. Bake for 10 minutes
  6. Remove from oven and sprinkle with remaining chocolate chips
  7. Bake for 10 more minutes or until toothpick inserted comes out clean
