Ingredients

  • canola oil (as needed)
  • 1 lb beef sirloin (in very this strips)
  • 12 teaspoon ginger (grated)
  • 6 shallots (minced)
  • 14 cup lime juice
  • 2 tablespoons nuoc nam
  • 12 cup rice (toasted
  • ground)
  • 2 green onions (minced)
  • 15 leaves cilantro (chopped)
  • 15 leaves basil (chopped)
  • 15 leaves mint (chopped)
  • 1 Thai chile (minced)
  • 14 cup dry roasted peanuts (chopped)
  • 1 leaf lettuce (separated)

Instructions

  1. Rub a wok with a little oil.
  2. Heat until very hot.
  3. Add beef.
  4. Sear 1-2 minutes.
  5. Stir in the ginger and shallots.
  6. Cook 30 seconds.
  7. Stir in lime juice, nuoc nam and rice.
  8. Arrange meat mix and the rest decoratively on a platter.
  9. Let each person make rolls with a lettuce leaf and fillings.
