Longaneza Breakfast skillet

Ingredients

  • 1 lb longaneza broken up in to pieces
  • 1 chayote cut up into small chunks
  • 1/2 onion sliced
  • 6 mushrooms sliced
  • 2 jalapenos sliced
  • 10 eggs cracked in a bowl
  • 1 salt to taste
  • 1 tbsp cooking oil

Instructions

  1. In large skillet heat oil then add longaneza.
  2. When longaneza is cooked thoroughly and is starting to crisp add all the listed veggies.
  3. When all the veggies are fork tender especially the chayote then add the eggs.
  4. Stir occasionally until eggs are cooked and fluffy , add salt to taste.
  5. Keep in mind that the longaneza already has salt added.
  6. Serve with refried beans and some fresh avacado.
