Lobster Tails In Champagne Sauce Recipe

Ingredients

  • 3 frzn lobster tails
  • 2/3 c. champagne or possibly sparkling wine
  • 2 scallions
  • chopped
  • 1 teaspoon salt
  • 2/3 c. whipping cream
  • 4 tbsp. unsalted butter

Instructions

  1. Rinse lobster tails.
  2. In skillet, combine lobster, champagne, scallions, and salt.
  3. Heat to boiling.
  4. Reduce heat, cover and simmer 15 min.
  5. Remove lobster; add in cream to sauce in skillet.
  6. Boil quickly till reduced to about 1/3 c..
  7. With a wire whisk, beat in butter (1 Tbsp.
  8. at a time) till smooth.
  9. Keep hot.
  10. Remove lobster from shells and slice into medallions.
  11. Spoon sauce over each.
  12. Serves 2.
