Ingredients
- 1 small onion
- 4 clove garlic
- 2 bell pepper
- any color
- 1 cup tomato sauce
- 1 can white bean
- such as cannelini or navy beans (14.5 oz)
- 2 cup chopped frozen spinach
- 1 1/3 tbsp basil
- dried (half amount for fresh)
- 6 cup vegetable broth
- 3 tbsp olive oil
- 2 celery stalks
- 4 oz any dried pasta (bite sized
- such as seashells)
- 1 parmesan cheese
- for garnish
- 1/2 tsp salt
Instructions
- Prepare pasta according to package directions.
- While pasta is cooking, rinse and drain beans;set aside.
- Dice onion, bell pepper, and celery; set aside.
- Mince garlic; set aside.
- Add the oil to a large saucepan on medium heat.
- Saute onion, bell pepper, celery and garlic for 5- 7 minutes or until the onions are translucent.
- Reduce heat and add tomato sauce, broth, salt, spinach, basil, and beans.
- Cover and simmer 15 minutes.
- Stir in pasta and heat until warmed through.
- Serve with a garnish of Parmesan cheese.
