Ingredients
- 1 lb Italian turkey sausage
- 3 bell peppers
- sliced (I like to mix red and green)
- 1 onion
- sliced thin
- 1 (14 ounce) can diced tomatoes
- 12 -16 ounces beer (select something youd drink)", "2 tablespoons minced garlic", "14 teaspoon crushed red pepper flakes", "14 teaspoon dried oregano leaves", "salt and pepper
Instructions
- spray a large pan with cooking spray and brown the sausage links over medium heat until they are mostly done.
- remove sausage from the pot and set aside for later.
- When cool, slice diagonally.
- Drain any excess fat from the pan, if there is any.
- (Not usually any for me)
- Saute onions and peppers over low-medium heat until they begin to soften.
- Add garlic and seasonings and saute 1-2 minutes more.
- Add the sausage back to the pan and pour in the beer.
- Let the mixture simmer until the beer is reduced to about half.
- Add the tomatoes and continue to simmer at least 10-15 minutes, or until the turkey sausage is cooked through.
- serve over brown rice or in sandwiches.
