Ingredients
- 2 cups mushrooms
- chopped
- 3 tablespoons olive oil
- 4 (10 ounce) packages frozen spinach
- thawed
- 5 egg whites
- slightly beaten
- 34 cup fat free sour cream
- 18 teaspoon ground nutmeg
- 12 teaspoon salt
- 12 teaspoon pepper
- 14 cup parmesan cheese
- grated
Instructions
- Saute mushrooms in olive oil in medium skillet until tender, about 10 minutes.
- Drain spinach thoroughly and stir into skillet.
- Stir in eggs, sour cream, nutmeg, salt and pepper.
- Spoon mixture into greased 1-1/2 quart casserole, sprinkle with cheese.
- Bake in preheated 350 degree oven for about 45 minutes.
