Ingredients

  • 3 ounces sugar free lemon gelatin
  • 1 cup boiling water
  • 8 ice cubes
  • 14 cup fat-free buttermilk
  • 2 tablespoons cream cheese
  • 1 teaspoon vanilla extract
  • 2 teaspoons fresh lemon juice
  • 12 teaspoon grated lemon zest
  • 2 tablespoons powdered sugar
  • 12 cup light whipped topping
  • 14 cup juice packed crushed pineapple
  • well drained
  • 1 cup thinly sliced banana
  • 1 cup quartered strawberry

Instructions

  1. In a mixing bowl, combine gelatin and boiling water.
  2. Stir until gelatin dissolves completely.
  3. Add ice cubes and stir until melted.
  4. Pour equal amounts into 4 parfaits glasses or wineglasses.
  5. Chill until set.
  6. In a mixing bowl, combine buttermilk, cream cheese, vanilla, lemon juice, lemon zest, and powdered sugar.
  7. Using an electric mixer, blend until smooth.
  8. Spoon equal amounts over set gelatin.
  9. Top each with 2 tablespoons whipped topping, 1 tablespoon crushed pineapple, 1/4 cup banana slices, and 1/4 cut strawberries.
  10. Serve.
