Ingredients
- 1 cup Leftover veggies
- potatoes
- and/or meat
- 1 tbsp butter or margarine
- 2 eggs
- 1 slice toast
- buttered
Instructions
- Chop leftovers.
- (I used leftover broccoli and steak fries with bacon and cheese)
- Melt butter in a pan.
- Add chopped leftovers to the pan and stir until they're heated through.
- Crack the eggs and add them to the pan.
- Stir to break up yolks and blend with the leftovers.
- Keep cooking until the eggs are fully cooked.
- Serve over toast, with your favorite sauce (salsa, bbq, hot sauce, Worcestershire, etc), if desired.
