Ingredients

  • 6 lg. eggs
  • hard boiled
  • 3 tbsp. butter
  • 1 lg. onion
  • sliced thin
  • 1-1/2 tsp. flour
  • 2 cups milk
  • 3/4 tsp. salt
  • 3/4 tsp. pepper
  • 1/4 tsp. ground nutmeg

Instructions

  1. Quarter the hardboiled eggs, lengthwise and set aside.
  2. Place the onion in a saucepan with the butter and brown slightly.
  3. Whisk in the flour, add milk, salt and pepper and nutmeg.
  4. Cook over low heat for about 20 minutes.
  5. Add the eggs, gently, simmer for about 5 minutes.
  6. Serve hot.
