2 dozen baby sweet basil leaves - finely chopped or torn .
2 dozen baby oregano leaves - finely chopped or torn
1 dozen parsley sprigs - leaves separated
1 2 cups of cheese of your choice - broken up into little pieces or grated .
1 salt
1 cracked black pepper
Instructions
preheat your oven to 180C .
cut the bacon pieces into rounds , making sure they are just a little bigger than your muffin holes as the bacon will shrink a little whilst cooking .
save the bacon off cuts to add to the middle of your bacon Bites .
place prepared bacon rounds into the muffin tin wholes , pushing down on the bacon to fill the hole completely .
add some of the chopped up tomato pieces into the bottom of the prepared bacon rounds , followed by some of the bacon off cut pieces , broken up into very small pieces .
add a pinch of each of the garlic chives , baby sweet basil , baby oregano , parsley , salt and cracked black pepper .
place a good layer of the cheese into the prepared bacon rounds , then a little more of the tomato pieces and bacon bits ontop of the cheese with a sprinkle more cheese if desired , season with salt and cracked black pepper .
place the prepared muffin tray filled prepared bacon rounds into the preheated oven for about 15 - 20 minutes till cooked or until cheese has melted and browned a little ontop .
once cooked remove from the heat and place on absorbant paper to let any excess oil drain off .
place on a serving plate and serve hot garnished with a little parsley and enjoy .

NOTE : if you would like your bacon outers to be a little more crisp then blind bake them , with weight to keep their shape , for about 15 minutes or so before filling them .
