Ingredients
- 400 g kumara
- peeled
- finely diced
- 350 g farfalle pasta
- also called bow tie pasta
- 2 teaspoons olive oil
- 1 onion
- finely diced
- 1 garlic clove
- crushed
- 150 g baby spinach leaves
- 34 cup cream
- lite is OK
- grated parmesan cheese
- salt and pepper
Instructions
- Boil or steam kumara till tender for 6 - 8 minutes, drain.
- Cook pasta according to instructions.
- Heat oil and cook onion till soft , about 4 minutes.
- Add garlic, kumara and spinach, stir till spinach wilts.
- Add to drained pasta along with cream and seasoning.
- Toss together lightly, serve with cheese on top.
