Kumara and Spinach Farfalle

Ingredients

  • 400 g kumara
  • peeled
  • finely diced
  • 350 g farfalle pasta
  • also called bow tie pasta
  • 2 teaspoons olive oil
  • 1 onion
  • finely diced
  • 1 garlic clove
  • crushed
  • 150 g baby spinach leaves
  • 34 cup cream
  • lite is OK
  • grated parmesan cheese
  • salt and pepper

Instructions

  1. Boil or steam kumara till tender for 6 - 8 minutes, drain.
  2. Cook pasta according to instructions.
  3. Heat oil and cook onion till soft , about 4 minutes.
  4. Add garlic, kumara and spinach, stir till spinach wilts.
  5. Add to drained pasta along with cream and seasoning.
  6. Toss together lightly, serve with cheese on top.
