Kiwi Lime Marmalade

Ingredients

  • 4 each kiwi fruit peeled
  • trimmed
  • 1 x lime zest slivered
  • 3/4 cup sugar
  • 2 tablespoons lime juice

Instructions

  1. Quarter the kiwis lengthwise, and then cut them crosswise into 1/2 inch cubes.
  2. Combine the kiwis with all the remaining ingredients in a deep 2 1/2 quart microwave-safe casserole, and stir well.
  3. Cook, uncovered, at full power (650 to 750 watts) for 5 minutes.
  4. Stir, return to the microwave, and cook until thick, another 6 minutes.
  5. Allow the marmalade to cool to room temperature; then cover tightly and refrigerate.
  6. It will keep for 1 week in the refrigerator.
  7. Makes 1 cup.
