Ingredients
- 1/2 head Cauliflower
- 2 Kiwi
- 4 tbsp Cottage cheese or ricotta cheese
- 2 tsp Whole grain mustard
- 2 tbsp plus Lemon juice (or wine vinegar or vinegar)
- 2 tbsp Olive oil
- 1/3 tsp plus Salt
- 1 dash Pepper
- 1 cm Garlic (tubed)
- 1 moderate amount Green vegetables
- if desired
Instructions
- Cut the cauliflower into desired sizes and boil briefly in hot water with salt (not listed) for 2 to 3 minutes.
- Cut off the both ends of kiwi and peel the skin.
- Cut it into quarter slices.
- Combine and mix in a bowl.
- It will stop separating and will thicken after a while.
- Add the boiled cauliflower into the bowl from Step 3, let the dressing soak in, and arrange it on a serving dish with the kiwi.
- Sprinkle cottage cheese (ricotta cheese) over it and it's done.
- I used some green vegetables in the photo.
- There are many ways to make homemade cottage cheese and ricotta cheese, but my favorite is Turkish dish cokelek, made with yogurt.
- Remaining cheese and boiled cauliflower can be wrapped with plastic wrap and stored in ziplock bags in the freezer.
