Ingredients
- 1 bunch Kale
- Washed
- Dried With Tough Stems Removed
- 1 clove Garlic
- Peeled
- 3 whole Green Onions
- 1/4 cups Toasted Soy Nuts
- Salt To Taste
- Olive Oil As Needed To Reach Desired Consistency
- 1 dash Lemon Juice
- Toast
- For Serving
Instructions
- In the large bowl of a food processor add kale, garlic, green onions, nuts and salt.
- Process to combine.
- Slowly drizzle in the oil until pesto comes together.
- Add just enough oil to get the consistency you like.
- I prefer a chunkier pesto for this application as it says on the toast better.
- Finish pesto with a squeeze of lemon.
- Toast a ciabatta bun, or whatever bread suits your fancy.
- Spread a generous topping of kale pesto over the top.
- Add a piece of sharp cheddar if you like, and place it under the broiler in your oven to quickly melt.
- Remove from oven and enjoy while warm.
