Kale Lentil and Chicken Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 1 cup coarsely chopped carrot
  • 2 garlic cloves
  • minced
  • 6 cups chicken broth
  • 1 teaspoon dried basil
  • 4 cups coarsely chopped kale
  • 12 teaspoon salt
  • 18 teaspoon black pepper
  • 1 12 cups cooked chicken (cubed) or 1 12 cups turkey (cubed)
  • 1 medium tomatoes
  • seeded and chopped
  • 12 cup red lentil
  • rinsed and drained

Instructions

  1. In a large saucepan, heat olive oil over medium low heat.
  2. Add onion, carrots and garlic.
  3. Cook, covered, for 5-7 minutes or until the vegetables are nearly tender, stirring occasionally.
  4. Add chicken broth and basil to vegetables.
  5. Bring to boiling; reduce heat.
  6. Simmer, covered, for 10 minutes.
  7. Stir in kale, salt and pepper.
  8. Return to boiling.
  9. Simmer, covered for another 10 minutes.
  10. Stir in chicken, tomatoes and lentils.
  11. Simmer, covered for 5-10 minutes or more until kale and lentils are tender.
