Kabocha Squash "Sweet Cubes" with Azuki Sauce

Ingredients

  • 1/2 Kabocha squash
  • 5 grams Kanten powder
  • 1 pinch Salt
  • 400 ml Water
  • 4 tbsp Maple syrup
  • 5 tbsp Boiled azuki beans
  • 4 tbsp Soy milk
  • 1 tbsp Maple syrup

Instructions

  1. Peel the kabocha squash and simmer with water, maple syrup, salt, and powdered kanten until softened.
  2. Blend in a blender.
  3. Pour into a container and chill in the fridge.
  4. Combine the boiled adzuki beans with soy milk and maple syrup.
  5. Grind in a mortar until your preferred thickness.
  6. Serve with the kabocha squash cubes.
