Ingredients

  • 2 cans yam cut
  • in light syrup
  • 16 ounces each
  • 20 ounces pineapple chunks in natural juice
  • 3 each kiwi fruit
  • 1 cup raisins
  • seedless
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch

Instructions

  1. Drain liquid from pineapple chunks and sweet potatoes into 2-quart microwavable pan.
  2. Peel Kiwi fruit, cut into quarters, length-wise, and slice thinly.
  3. Cut pineapple chunks into quarters.
  4. Add brown sugar and corn starch to liquid in pan; mix well.
  5. Add butter and raisins.
  6. Microwave at 60% for 3 minutes, or until butter is melted; mix well.
  7. Add pineapple and Kiwi fruit.
  8. Microwave at 80% for 5 minutes.
  9. Mix well.
  10. Microwave at 80% for 5 minutes more, or until sauce begins to thicken.
  11. Add sweet potatoes.
  12. Mix well, but gently, so as not to break up potatoes.
  13. Microwave at 80% for 5 minutes.
  14. Let stand 3 minutes; stir before serving.
