Italian Stracciatella Soup

Ingredients

  • 6 cups chicken broth
  • 1/2 cup orzo pasta
  • 2 eggs
  • 1/3 cup Kraft 100% Parmesan Grated Cheese
  • 2 Tbsp. chopped fresh parsley
  • pinch of ground nutmeg and freshly ground black pepper

Instructions

  1. BOIL chicken broth in a large saucepan; stir in orzo and cook 5 to 6 minutes until 'al dente.'
  2. BEAT eggs; mix in cheese and parsley and seasonings until well blended.
  3. ADD egg-cheese mixture to broth, gently stirring with wire whisk.
  4. SIMMER for 2 to 3 minutes.
  5. (The egg-cheese mixture will form tiny flakes in the broth.)
  6. SPRINKLE with extra cheese, if desired.
  7. Serve immediately.
