im-jud ' dara (lentils on rice)
Ingredients
- 12 cup olive oil
- 1 large onion
- chopped
- 1 cup lentils
- 1 cup white rice
- salt
- pepper
- cilantro
- mint
- yogurt for garnish
Instructions
- in pan heat oil, add onions to brown, set aside.
- combine lentils and 4 c water in a large saucepan, bring to boil, cover and simmer for 10 minutes add rice, onions in oil, salt and pepper, cover and cook 25-30 minutes.
- serve hot, warm or cold, garnish w/yogurt and herbs.
