Ingredients
- 1 tbsp. oil
- 1/3 c. minced onion
- 1 clove garlic
- mashed
- 4 Large eggs
- 1 (14 ounce.) can artichoke hearts
- liquid removed
- 1/4 c. dry bread crumbs
- 2 tbsp. chopped parsley
- 1/2 pound sharp Cheddar cheese
- grated
- 1/4 teaspoon oregano
- Dash salt and pepper
- 1/8 teaspoon Tabasco sauce
Instructions
- Grease a baking dish (7x11).
- Preheat oven to 325 degrees.
- In skillet, heat oil and saute/fry onion and garlic till limp but not brown.
- Beat Large eggs to a froth; chop artichokes in very small pcs and add in to skillet.
- Stir onion, crumbs, cheese, parsley and seasonings.
- Turn mix into baking dish and bake for 25-30 min till set when lightly touched.
