Ingredients
- 2 cups all-purpose flour
- 1/2 cup sugar
- 2 medium (1 cup) carrots
- shredded
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup Land O Lakes Butter
- melted
- 3/4 cup milk
- 2 Land O Lakes Eggs
- slightly beaten
- 1 teaspoon vanilla
- 1/4 cup honey
- 2 tablespoons Land O Lakes Butter
Instructions
- Heat oven to 350F.
- Grease or line 12-cup muffin pan with paper baking cups; set aside.
- Combine flour, sugar, carrots, baking powder and salt in bowl.
- Stir in all remaining muffin ingredients just until moistened.
- Spoon batter evenly into prepared muffin pan cups.
- Bake 22-26 minutes or until toothpick inserted in center comes out clean.
- Cool in pan 5 minutes.
- Combine honey and 2 tablespoons butter in bowl.
- Microwave 30-40 seconds or until butter is melted.
- Stir until well mixed.
- Dip warm muffins into honey mixture.
- Serve any remaining topping with muffins.
