Ingredients
- 1 lb cherry tomatoes (or more)
- 2 tsp fine sea salt
- 1 olive oil
- extra virgin
- 1 garlic clove
- 1 bunch fresh rosemary
Instructions
- Halve cherry tomatoes and put them on a wooden cutting board lined with parchment paper.
- Add salt (it draws moisture out of the tomatoes)
- Set tomatoes on your balcony in the sun.
- My tomatoes took 3 days to dry, it's 40C outside.
- They should be dry but not crispy, you're looking for the texture of a dried apricot.
- If the tomatoes are too dry, they won't taste good and if they are too watery, they will spoil quickly in the jar, so check regularly on them
- Once dry, put tomatoes in a sterilized jar, submerge in good quality olive oil.
- You can add spices as well, I added fresh rosemary and a whole clove of garlic
