Hodgson Mill Penne with Fresh Tomatoes and Garlic

Ingredients

  • 2-1/2 cup uncooked Hodgson Mill Whole Wheat Penne
  • 1 tbsp. olive oil
  • vegetable oil
  • 3 cloves garlic
  • finely chopped
  • 2 lb. Roma (plum) tomatoes
  • coarsely chopped
  • 2 tbsp. chopped fresh basil leaves
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground pepper

Instructions

  1. Cook and drain pasta as directed on package.
  2. While pasta is cooking, heat oil in a skillet over medium-high heat.
  3. Cook garlic in oil 30 seconds, stirring frequently.
  4. Stir in tomatoes.
  5. Cook 5-8 minutes, stirring frequently, until tomatoes are soft and sauce is slightly thickened.
  6. Stir in basil, salt and pepper.
  7. Cook 1 minute.
  8. Serve sauce over pasta.
