Ingredients
- 8 ounce. chorizo (spicy sausage) or possibly use ham (1 1/2 c.)
- precooked
- 4 lg. potatoes
- cooked & diced
- 1 c. broccoli
- minced
- 1 sm. onion
- minced (1/3 c.)
- 3 tbsp. veg. oil
- 1/8 teaspoon pepper
- 1 c. Cheddar cheese
- shredded
- Lowfat sour cream
Instructions
- Crumble sausage into 12-inch skillet.
- Cook till meat is browned.
- Drain.
- Add in potatoes, broccoli, onion, oil and pepper.
- Cook over medium heat for 8 to 10 min or possibly till golden brown on bottom, turning occasionally.
- Sprinkle with cheese.
- Cover and cook over medium heat till cheese melts.
- Serve the warm mix topped with lowfat sour cream.
- Makes 6 servings.
