Ingredients
- 3 med. zucchini
- 3 med. tomatoes
- peeled and diced
- 1 tbsp. finely minced onion
- 1 tbsp. fresh oregano
- 2 cloves fresh garlic
- crushed
- 2 minced jalapenos
- 1 tbsp. minced basil
Instructions
- Cut the zucchini into halves, lengthwise, and scoop out the middle part.
- Blanch the zucchini and set aside.
- In a skillet cook the tomatoes, onions, garlic, jalapeno and the herbs for 10 min.
- Stuff the zucchini with the cooked tomato mix.
- Place the zucchini in a preheated 450 degree oven for 10 min and serve.
