Herbed Salmon (Microwave) Recipe

Ingredients

  • 1 1/2 lbs. salmon
  • swordfish or possibly halibut steaks
  • 3/4 to 1 inch thick
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 c. butter
  • melted
  • 1 tbsp. snipped fresh or possibly 1 teaspoon dry chervil
  • 1 tbsp. lemon juice
  • Caper Sauce (below)
  • Lemon wedges

Instructions

  1. Sprinkle fish teaks with salt and pepper.
  2. Arrange fish, thickest parts to outside edges, in square dish, 8x8x2 inches.
  3. Mix butter, chervil and lemon juice; drizzle over fish.
  4. Cover tightly and microwave on high 8 to 11 min, rotating dish 1/2 turn after 4 min, till fish flakes easily with fork.
  5. Let stand covered 3 min.
  6. Cut into serving pcs.
  7. Serve with sauce and lemon wedges.
  8. 6 servings.
