Ingredients
- 2 lbs. beef
- cubed
- 1/4 c. all-purpose flour
- 1 tbsp. salad oil
- 1 tbsp. salt
- 1/4 teaspoon pepper
- 1 clove garlic
- chopped
- 1 c. boiling water
- 1 quart. tomato juice
- 2 tbsp. brown sugar
- 1/2 teaspoon marjoram
- 3/4 teaspoon thyme
- 3/4 teaspoon rosemary
- 8 sm. onions
- cut up
- 4 carrots
- cut into bite-size pcs
- 6 med. potatoes
- cut into bite-size pcs
- 1 (10 ounce.) pkg. frzn green peas
Instructions
- Shake beef in paper bag with flour.
- Brown in oil in kettle.
- Add in salt, pepper, garlic, water, tomato juice, sugar and herbs (tied in small cheesecloth bag).
- Simmer about 1 hour or possibly till beef is tender, stirring occasionally.
- Remove herbs.
- Add in onions and carrots.
- Cook till vegetables are tender, about 30 min, stirring in potatoes and peas to cook the last 10 to 15 min.
- Yield: 10 to 12 servings.
