Ingredients

  • 3 tablespoons chopped fresh parsley
  • 1 tablespoon finely chopped green onion
  • 2 teaspoons finely chopped garlic
  • 2 tablespoons olive oil
  • 1/3 cup whole-wheat bread crumbs
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon dried thyme
  • Salt and ground black pepper to taste
  • Four 6-ounce pieces loin of lamb

Instructions

  1. Preheat the oven to 425 degrees.
  2. Combine the parsley, green onion, garlic, oil, bread crumbs, cumin, turmeric, thyme, salt, and pepper on a plate.
  3. Stir to mix.
  4. Press the seasoning mixture onto both sides of each piece of lamb and place in an 8-inch square glass baking dish.
  5. Bake, turning the pieces of lamb once, for a total of 15 minutes for medium-rare doneness or 20 minutes for medium doneness.
