Hellboy's Fried Rice

Ingredients

  • 2 cups jasmine rice
  • 1 tablespoon chicken stock
  • 1 tablespoon peanut oil
  • 1 green capsicum
  • 1 onion
  • 1 carrot
  • 100 g bacon
  • 3 eggs
  • 1 teaspoon basil
  • 1 teaspoon garlic
  • 12 teaspoon ginger
  • 2 tablespoons sweet chili sauce
  • 2 tablespoons soy sauce
  • 14 teaspoon salt
  • 14 teaspoon black pepper

Instructions

  1. Cook the Rice in the usual manner, adding the chicken stock to the water.
  2. Leave in the fridge for a few hours.
  3. Cooking the day before is a good idea.
  4. Chop the Onion, Carrot and Capsicum into find pieces.
  5. Fry the Egg and Bacon in a pan and put aside.
  6. Chop them both into fine pieces.
  7. Heat the oil in a pan, add the onion, garlic, ginger and basil.
  8. Cook for a few minutes.
  9. Add the chopped Carrots and Capsicum.
  10. Cook for a few more minutes.
  11. Add the Rice and cook for a few more minutes.
  12. Add the Sweet Chilli Sauce, and mix it inches.
  13. Add Salt, Pepper and Soy Sauce to taste.
  14. Add the pre-cooked Bacon and Egg.
  15. Enjoy!
