Hearty Vegetarian Scramble

Ingredients

  • 2 large eggs
  • 1 Handful of spinach
  • 1/4 cup Diced mushrooms
  • 1/4 cup Cooked quinoa
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 as needed Shredded cheese
  • 1 Splash of milk or milk substitute

Instructions

  1. Beat eggs together.
  2. Add a splash of milk.
  3. Spray pan with cooking spray and heat over medium high heat.
  4. Pour egg mixture in pan and add spinach and mushrooms.
  5. Let it cook 1-2 minutes.
  6. Add remainder of ingredients except for cheese.
  7. Mix continuously.
  8. When eggs are cooked to desired doneness sprinkle with cheese and serve.
