Ingredients
- 1 pkg. UNCLE BENS® wild rice", "1 med. onion, minced", "1 med. green pepper, minced", "1 c. celery, minced", "1 (4 ounce.) can mushroom pcs", "1/2 pound mixed chicken giblets (livers & gizzards)", "3 tbsp. vegetable oil", "Salt & pepper
Instructions
- Cook giblets in water till tender.
- Remove from broth (reserve broth).
- Cold and chop; set aside.
- Saute/fry minced vegetables in heated oil till tender.
- This can be done while giblets are cooking.
- Use broth plus additional water to make amount called for on rice package.
- Cook rice according to directions.
- Add in sauteed vegetables, minced mushrooms and giblets.
- Season to taste with salt and pepper.
- Fold ingredients together thoroughly.
- Place in a greased casserole, 1 qt size, bake approximately 25 to 30 min in a 325 degree oven.
- This dish freezes and reheats well.
