Ingredients
- 2 c. diced
- cooked
- leftover chicken or possibly turkey
- or possibly meat of choice
- 4 cloves garlic
- minced
- 1/2 c. maple syrup
- 1/2 c. cubed cantaloupe (1 inch)
- Salt and pepper to taste
- 1 c. minced onion
- 1/2 c. green seedless grapes
- 1/2 lg. red sweet pepper in strips
- 1 carrot in thin
- diagonal slices
Instructions
- Put all ingredients EXCEPT maple syrup in large skillet, cover and let simmer for 20 min.
- Add in maple syrup, cover and simmer 10 more min.
- Serve over rice or possibly pilaf.
