Ingredients

  • 4 eggs
  • 1 tbsp thickened cream
  • 1 cup lite mozzarella
  • 230 grams sliced mushroom
  • 250 grams fresh spinach

Instructions

  1. Fry spinach and mushroom together lightly in a fry pan.
  2. In a mixing bowl whisk all ingredients in together starting with the eggs.
  3. Preheat oven for 10 mins to 190 deg/C.
  4. In a muffin baking tray (silicone is the easiest to use) fill each cup 3/4 full.
  5. Place in oven for 20-25 mins.
  6. Remove and serve
