Healthy English French Toast

Ingredients

  • 5 each eggs
  • 1 1/2 cup almond milk
  • 1 tsp nutmeg
  • 2 tsp cinnamon
  • 2 tsp vanilla extract
  • 1 tbsp coconut rum (optional)
  • 5 whole-grain English muffins
  • halved (or favorite Breakfast Toast)
  • 2 bananas
  • sliced
  • 4 tbsp shredded coconut
  • 1/4 cup sliced almonds
  • 8 tsp maple syrup

Instructions

  1. Preheat oven to 350F.
  2. In a bowl, whisk together almond milk, nutmeg, cinnamon, vanilla extract, rum and eggs.
  3. Place muffins on a baking dish lightly coated in cooking spray, then layer banana slices on top.
  4. Pour egg mixture over muffins.
  5. Press down to soak up all liquid mixture.
  6. Top with coconut & almonds.
  7. Bake 35 to 40 minutes or until cooked through.
  8. Enjoy with maple syrup.
