Ingredients
- 1 12 cups shredded carrots
- 8 ounces crushed pineapple
- 14 cup canola oil
- 12 cup brown sugar
- 18 cup Splenda Sugar Blend for Baking
- 12 cup raisins
- 12 cup chopped pecans
- 1 granny smith apple
- pealed & chopped and cooked (microwave for 4 minutes with tbl water)
- 12 cup egg white
- 1 cup flour
- 12 cup whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 3 teaspoons cinnamon
- 12 teaspoon nutmeg
- 14 teaspoon salt
Instructions
- Mix flour, baking powder, baking soda, cinnamon & nutmeg.
- and salt together in a bowl and set side.
- In another bowl, whisk together egg whites, oil, sugar and pineapple.
- Pour egg mixture in to flour and stir to incorporate.
- Mix in carrots, nuts raisins and pour in a 9 by 9 baking pan.
- Bake 30 to 40 minutes at 350 degrees until toothpick comes out clean when tested.
